Mmmm.... pie.

Williams-Sonoma has these awesome little pocket pie molds that make gourmet-ish looking pie's super easy and actually sorta fun. I used the pre-made Pillsbury dough and I filled them with Williams-Sonoma apple pocket pie filling (which I couldn't find on the website, but I'm sure they have it in the store). So easy it's criminal.



Seriously..... if I can do it, anyone can.

Garage: Before and After

I know I haven't posted in a long, long time. But I was just so proud of myself for cleaning out the garage that I thought I might post before and after pictures. :o)



The amount of spiders, new and old spider webs, and other bugs was insane. The garage had it's own eco-system, which I seriously upset with the help of our new shop-vac.



We got rid of lots of stuff. Removed most of the vines that were creeping along the floor, and got rid of leaves. Now we can move all the stuff from our storage unit into here, which will help cut unnecessary costs.

Chocolate Tofu Pie

The other day my friend Suzey gave me one of her favorite vegan dessert recipes while we were on the phone. It sounded delish and simple enough for me to make, so I figured I'd give it a whirl.

Here's what I did:
(You need a food processor or blender to make this)

16oz firm tofu
1 bag semi-sweet chocolate chips.... I think it was around 12oz.
1 pre-made graham cracker crust

Break the tofu into chunks and start loading it into the processor. I squeezed the extra water out of the tofu... but it made it hard to blend. Start melting the chocolate chips in a bowl or whatever in the microwave. Pause the blending to add scoops of melted chocolate. Blend some more. I added some vanilla soy milk to moisten it up a bit, but that is entirely optional. Throw in some unmelted chips for texture. Blend some more. And some more. Until the entire mixture is a nice chocolatey color. Scoop out of the processor and into the pie crust. Chill for at least 3 hours. It ends up being the consistency of chocolate mousse pie.

Went to Ikea today and picked up a much needed sofa for the living room. It's a long overdue addition to the decor. Next addition: rug. Not sure how well it'll go, given that the sofa we bought today is a little more vivid than I initially expected. But, we'll just have to wait and see.

Insurance Woes

When I started my full-time job at the hospital, I made sure I picked the most expensive and comprehensive insurance plan offered since I hadn't had insurance for quite a while. And everything was going okay until today. I went to a regular doctor for a something I've been concerned about for a while, but he told me that I'd need to see a specialist. I asked him for a referral, he said that with RegenceBCBS, I shouldn't need one. So... I saw a specialist of my choosing. And I got the notice in the mail today that my claim for the specialist has been denied. And of course it's a weekend, which means I won't be able to start fixing this issue with the insurance until Monday.

Lame.
